Tuesday dinner: Vegetable paella with tofu, adapted from Everything Vegan; shrimp gyoza from Trader Joe’s. I substituted zucchini for mushrooms and turmeric for saffron, and added celery. Good, but wasn’t terribly filling.
Thursday dinner: leftover red lentil soup at church.
Friday dinner: Creamy Chickpea Curry, which was very tasty but could have been a little more filling. Maybe 1.5 cans of chickpeas next time?
EDIT: Also! A friend of mine is going to seminary and I made this Bittersweet Chocolate and Pear Cake for his going away party. The cake was delicious (two words: brown butter). The party was bittersweet.
